Crepes originate from France, where they are a very common breakfast. They are basically extra-thin pancakes. The secret is that you can make them all about the filling, rather than the flour base.
Vegan Crepes are made without even using an egg. If you want them to be easier to flip, or want stronger consistency, then think about adding Ener-G Foods Egg Replacer. You can also add consistency with agar powder, if you are skilled in using it.
These vegan crepes go good with any fruit filling. Strawberries, bananas, berries, and tropical fruit works best. You can even add Vegan Whipped Cream. Top with maple syrup or substitute in agave nectar.
You can also make these vegan crepes gluten-free, replacing the traditional flour with a Gluten-Free Flour mix. Just remember to experiment with different toppings, and make to flip them carefully while cooking.
- soy or almond milk - 1/2 cup
- vegan margarine - 1/4 cup
- sweetener - 1 Tbsp (your choice)
- maple syrup - 2 Tbsp.
- vanilla extract - 1/2 tsp
- flour - 1 cup
- salt - 1/2 tsp
- water - 1/2 cup
- olive oil - small amount to grease the skillet
- strawberries - (optional) sliced
- banannas - (optional) sliced
- blueberries - (optional)
- cinnamon - (optional)
In a large bowl, mix the soy or almond milk, water, vegan margarine, sweetener of your choice, flour, vanilla extract and salt. Cover and chill the mixture for 2-4 hours before cooking (the longer the better). Since you are probably making crepes for breakfast, think about making the mixture the night before.
Lightly grease a 5 to 6 inch skillet with (olive oil, or sub in canola oil or vegan margarine.) Cook on High Heat. Add 3 tablespoons batter into the skillet. Swirl the skillet to smooth the crepes along the skillet's bottom. Cook until golden, then flip.
Vegan crepes may be difficult to turn, because there is no egg. Use a thin spatula to aid in the process. Think about adding an egg replacer, or mix in agar powder if it proves difficult the next time.
Be gentle when flipping, and make sure to prevent the crepes from sticking during cooking. Once flipped, cook on opposite side. Add a fruit or cream based filling, and fold together.
